Marta’s Chipotle turkey Chili
You can never go wrong with Chili. I’ve made so many variations over the years, that I thought maybe I should put pen to paper and write one of my favourites down.
3 pounds of ground turkey or chicken ( or do a combo!)
1 Tbsp Olive oil
1 large onion – pulsed in your food processor with…
4 garlic cloves
Salt to taste
Cremini mushrooms – about 10 mushrooms, chopped.
PULSE the FOLLOWING in your food processor:
4 Large celery stalks
1/2 can of Chipotle Peppers in Adobo sauce
1 TBSP Smoked Paprika
1 Tsp to 1 TBSP of dried Chipotle peppers – to taste
1 tsp chili powder
1/2 Tbsp Cumin powder
1 tsp dried Oregano
2 jars of Marinara sauce
2 cans black beans
1 can corn
Brown the onions, garlic and mushrooms in a large pot. I use a giant heavy wok.
add the turkey and stir. break apart the meat.
Once the meat is browning, add all remaining ingredients. Stir, cover and simmer for about 30 to 40 minutes.
I find that making ahead and letting it sit for 30 minutes really releases the flavours.
easy Peasy, lemon squeezy!
Serve with homemade corn bread, noodles or baguette.
