Healthy Banana Peanut Butter Pancakes
For a quick breakfast that is yummy and a change from our usual Banana Muffins, I decided to modify a recipe that I found which was full of sugar and I added more protein!
Everyone loves these!
Ingredients:
2 ripe Bananas – mashed with a fork
4 eggs
1/2 cup unsweetened Peanut Butter
1/4 cup Golden Lakanto Monk fruit sugar – I throw mine in a coffee grinder to create a finer texture
3/4 cup Almond milk or Macadamia milk ( really any non dairy milk would work and if you are good with dairy then have full fat milk!)
1 tsp baking powder
1/2 cup gluten free flour
1/4 cup coconut flour
1/3 cup almond flour
a pinch of salt
fresh blueberries if you would like to add them once you pour the batter in the pan!
Instructions:
In a stand mixer combine the first 5 ingredients – mix well.
In another bowl stir the rest of the ingredients
Add the dry ingredients to the wet ingredients and mix well
I usually let it sit for about 5 minutes
Heat a frying pan and melt a dab of butter or use your oil of choice
Pour 1/4 to 1/3 of a cup of the batter
cook on medium, flip until golden brown and ENJOY!
The Kids like it with Maple syrup, I just eat it plain.
