Chana Masala roasted Veggies with Halloumi

I came up with this yesterday. Made some smoked turkey so needed a veggie. The boys had mashed potatoes but I needed something else for me. If you don’t know what Halloumi is, then you’re missing out. It is a delicious middle eastern cheese that does not melt when cooked but becomes soft and delicious.

Cube vegetables – whatever root veggies you like!

I did Yam, Beets and carrots.

Toss with some Olive oil and line a baking sheet with aluminum foil.

Sprinkle salt and Chana Masala powder.

Stir and bake for 20 minutes at 375

While it is baking cut Halloumi into small rectangles.

Remove from the oven and disperse cheese.

Bake for 20 more minutes.

SO YUMMY!!!
