Tiger Nut Flour Blueberry Muffins

I just bought some Tiger Nut flour from Flour Confections on Brock Road.  I’ve already made pancakes with it ( yummy) and now I’m trying muffins.  These are grain free and dairy free, also sugar free.  They turned out amazing!  Tiger nuts are a great pre biotic and add a fantastic flavour to baked goods. They are a tuber, originally from Nigeria.  Tiger Nuts are used in an amazing drink called Horchata from Spain. So delicious…

Ingredients:

4 small eggs ( 3 large eggs)

1/4 cup apple sauce

1/4 cup avocado oil or melted and cooled Coconut oil

1/3 cup of Monk Fruit with Erythriol – You can buy this at Flour Confections as well.

1/4 tsp salt

1 tsp Baking Soda

1/2 cup almond flour

1/2 cup Hazelnut flour ( optional, you can use 1/2 cup almond flour instead – I found it really added a great taste to them)

1 Cup Tiger Nut Flour

1 cup blueberries

OPTIONAL – Chocolate chips or nibs

Directions:

Preheat oven to 350

Spray or coat your muffin tin ( i use silicone only) with avocado oil

In a stand mixer mix eggs, apple sauce, oil and monk fruit for about 1 minute

Add the flours, baking soda and salt

Stir in Blueberries and optional Chocolate chips

distribute evenly in the muffin tin ( you might get 10 muffins or 12 but smaller)

Bake for 22 to 25 minutes until the top springs back when touched.

cool for 5 minutes in the muffin tin and flip out on wire rack to cool completely.
