Chia Seed Pudding – 2 Ways – AIP friendly
My naturopath has put me on an AIP diet. I already eat quite well, but now I”m doing an Auto Immune Protocol for the next foreseeable future. This means no dairy, no grains, no sugar, no nightshades, no eggs, no legumes. I’m trying to find great ways to have a snack or breakfast without eggs. Stay tuned for my Cassava Couscous breakfast!
This is so delicious especially with added Unicorn Superfoods! I’m a little crazy about these right now.
Mango Chia Seed Pudding
Ingredients:
250 ML Savoy Coconut Cream ( you can use any other kind too, this is the my go to – You can buy it at Pacific market or Blue Sky)
3 Tablespoons of Chia Seeds
1 cup Mango ( i use frozen and defrost it)
1/2 banana
1 tablespoon Unicorn Superfoods Tropicana Blend
1 Tsp Alkalising Blend ( green superfoods)
Instructions:
Throw everything in your Food Processor and Pulse for about a minute.
Distribute evenly in ramekins. Cover with plastic wrap or your beeswax wrap
Let it rest in the fridge for 2 hours to become pudding like!
Note: 250 Ml on Coconut cream usually fills 5 ramekins.
Blueberry Chia Seed Pudding
Ingredients:
250 ML Savoy Coconut Cream ( you can use any other kind too, this is the my go to – You can buy it at Pacific market or Blue Sky)
3 Tablespoons of Chia Seeds
1 cup Blueberries ( i use frozen and defrost them)
1/2 banana – Optional
1 tablespoon Berrylicious Blend
1 Tsp antioxidant blend
Instructions:
Throw everything in your Food Processor and Pulse for about a minute.
Distribute evenly in ramekins. Cover with plastic wrap or your beeswax wrap
Let it rest in the fridge for 2 hours to become pudding like!
