Spicy cheese and ham grain free muffins
72 grams of coconut flour
20 grams arrowroot flour
52 grams almond flour
1 tBSP Baking powder
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp chipotle peppers
1/4 tsp pepper
1/2 cup full fat milk
1/4 cup salted butter – melted and cooled slightly
1/2 cup MEAT – you can use turkey Kielbasa, bacon, a good smoked ham – pulse in your food processor
1 cup Cheese grated – again you can choose – I really like a spicy cheddar I get, but I’ve also used Gruyere, tex mex cheese or any cheese of your liking
You can also probably omit the meat and just add a little bit of cheese
Preheat your oven to 350
I use a silicon muffin tin – which I “paint” with avocado oil
Using your stand mixer mix the dry ingredients with a paddle.
throw in the wet ingredients and stir until incorporated.
Fold in Meat and Cheese
Scoop into muffin tin. Bake for 22 minutes.
You can store it in a sealed container at room temp. I prefer storing it in the fridge, then reheating for 15 seconds in the microwave.
