Cauliflower muffins

 

IMG_8791.jpgI love these!  When I’m working late, I sometimes pack up a few as a quick dinner.  just toss them in the microwave for 30 seconds and yum!  Can be eaten cold too.  Maya loves these.

Ingredients:

1/4 to 1/2 cauliflower head – made into “rice” in your food processor

( you can also throw in a bit of broccoli)

bacon or smoked sausage – again pulsed in your processor

1/4 cup coconut flour

1 to 2 cups of cheese – cheddar, jack, mozz….

3 to 5 eggs – you can’t go wrong here

1/2 cup heavy cream  ( can be replaced with coconut cream if need be)

salt and pepper

chipotle flakes or paprika or garlic powder – or ALL!

ground mustard or dijon

1 onion – minced

directions:

Mix all ingredients in your stand mixer

Press firmly into silicone muffin tins.  Now that i’m tried these, I can’t go back!  You can also use regular muffin tins with papers

Bake at 375 for about 30 minutes or until lightly brown on top

Let cool in the tin

Store in the fridge for up to 5 days.

Modifications:

Omit the meat for vegetarian treat

Take out bacon, add smoked salmon and capers

add Black olives or Calamata olives
