Peanut butter custard

Who doesn’t like a good custard or pudding?  You can totally have this and still remain in ketosis.  This is a great way to use the 6 egg yolks you now have from your bread!

Ingredients

1.5 cup full fat milk ( haven’t tried with coconut milk, but it might work…)

1 tsp vanilla

6 yolks

1/4 monk fruit powder ( can be found at Bulk Barn)

1 heaping tsp cornstarch ( this is not technically Keto but it is negligible)

1.5 Tbsp butter at room temp

1/4 cup peanut butter

Directions:

Heat Milk and vanilla in a saucepan on medium heat until almost boiling

In a stand mixed using a balloon whisk to  mix the egg yolks, monk fruit, cornstarch, butter.

Very slowly pour in the milk ( too fast and you will have an omelette)

once smooth pour back into saucepan.  Add the peanut butter. On medium heat, stir constantly for 2 to 5 minutes until thickened.

pour into ramekins, cover and refrigerate.

So freaking yummy!
