Apricot Protein Bars – Paleo

I’m finding these are very filling and a great breakfast or
snack.  I find that I don’t crave sugar
or other snacks when I have these around.
I look for apricots and all dried fruit without added sugar.

1 cup blanched almond flour

¼ teaspoon celtic sea salt

¼ cup coconut oil

1 tablespoons honey

1 tablespoon apple sauce ( You can add 2, just makes it a
bit more moist)

1 teaspoon vanilla extract

½ Teaspoon pumpkin pie spice

½ cup unsweetened shredded coconut

¼ cup hemp seeds

¼ cup sesame seeds

½ cup sunflower seeds

¼ cup pecans

¼ to ½ cup apricots

 

( You can also add ¼ cup ground chia seed for an extra
boost!)

 

In a food processor combine almond flour and salt

Pulse in coconut oil, honey, apple sauce, spices and vanilla

Pulse in coconut, seeds, pecans and apricots.  ( I roughly chopped the apricots by hand
first)

Press dough into an 8 x 8 inch baking dish lined with
parchment paper wetting your hands with water to pat dough down

Bake at 350° for 20 minutes

Leave in dish for about 10 minutes.  Move the whole piece with the parchment paper
onto a cooling rack.  Let cool slightly
and cut into bars.

 

Serve

Makes 16 bars
