The Best Coconut Bars

I’m always looking for a tasty snack/breakfast bar/ dessert to satisfy those cravings for yumminess. Most recipes will have grains, but I found one recipe in my favourite book of the day ” Nourishing traditions” that did not.


Makes 16 bars


Bottom layer:

¾ cup skinless almonds

¼ cup softened butter or
coconut oil

½ cup arrowroot flour

¼ cup coconut sugar or

1 tsp vanilla

pinch of salt

Top layer:

1 egg

¼  cup plain yogurt

½ cup honey – I used a
little less….

1 tbsp vanilla

1 tsp. lemon rind

2 tbsp. arrowroot flour

pinch of salt

1 ½ cups dried unsweetened
coconut – shredded


Preheat oven to 300

Place almonds in food
processor and grind to a fine powder.

Add butter, arrowroot,
coconut sugar, vanilla and salt.

Process until smooth.

Press into a well buttered
9 by 9 or 7 by 11 pan.  You can use aluminum
or pyrex.

Bake for 20 minutes

Let cool.


Beat egg lightly, add
yogurt, honey, vanilla, lemon, salt and arrowroot and beat some more on
medium.  Stir in coconut.

Spread on almond pastry
with a rubber spatula.

Bake at 325 for 25 minutes

Let cool slightly before
cutting into bars.

Let cool completely before
removing from the pan.

YUMMY!   I’m going to try to use
lemongrass paste instead of lemon rind next time…
