It’s time to get creative with MODIFICATIONS

I work in an office of many women.  Beyond the conversation of clothes, kids, and houses we spend a lot of time talking about food.  In fact it is not uncommon for a mass email about a new receipe to be sent around the office weekly. As the only paleo eater in my office I want to take part in this receipe sharing and experimenting but in order to do so I need to find a way to make some modifications. Guess what?  They tend to be easy! 

This was the receipe shared in my office today-easy slow cooker chicken:

Ingredients:

4 boneless, skinless chicken breasts

1 cup salsa (modify if desired)

1 package taco seasoning

1 can cream of mushroom soup (modify if desired see below)

½ cup sour cream(modify if desired see below)

 

Add chicken to slow cooker

Sprinkle taco seasoning over chicken

Pour salsa and soup over chicken

Cook on low for 4-6 hours

Remove from heat and stir in sour cream

Serve with rice.(modify if desired see below)

 How to modify this?

 1 cup salsa : make your own:dice tomato, cilantro, and onion, season to taste

½ coup sour cream: replace with cold coconut milk with a few drops of lemon

1 can of cream of musroom soup: replace by making a version of your own by sautéed diced mushrooms in oil, stirring almond flour right into them, and gradually adding nut milk to consistency

Serve over rice: replace with sautéed broccoli, or veggies of your choice!
